ok so theres some important place on the island called the black rock. and there was a black rock and a white rock found on adam and eve. and locke had white and black eyes. does anyone know if theres a special white rock place on the island? or maybe thats coming up.
I think someone on a post mentioned that they thought that part of the map in Danielles place looked like there could be a white rock on the south part of the map.

Maybe they aren't physical places at all.
Maybe they're symbolic for good and evil. Travelling to the black rock would thus probably be a very bad place to go.

Why does Black have to symbolize evil?

It doesn't have to.
I can't point to any one event but it seems to me that white has a tendency, in the past, to be associated with goodness and pureness and black with evil.

I posted this on another thread, it shows black and white sometimes are used for the same purpose:
Black and White stones have been used in a lot of cultures and mystic/astrological/etc beliefs, for example:
White - These stones are usually associated with truth and purity. They avert the Evil Eye and carry the protection of heaven, said to be their place of origin. Stones that sparkled, and rock crystal, defeated every kind of witchcraft, and those which were marked either by Nature or art with bands of a different colour, circles, etc. were greatly esteemed.
Black - Jet was considered a magical stone accredited as the protective agent against just about everything that goes bump in the night. Stones were protections against the Evil Eye; when burnt in powders it protected absent loved ones and it drove away snakes and reptiles. Obsidian and mica are sometimes lodged under the heading of the colour black, but as in the situation with onyx, they tend to respond to vibes allied with either the Plutonian or Saturnian urge.

It continues:
Misc. Notes: Moonstones were said to protect against epilepsy, bring farmers a healthy cornucopia of crops, and confer good luck. The stone balances the inner plane system and, like moss agate, assists recovery of health after an illness. See also The Breastplate of Aaron. The book of Exodus contains an important reference to Turquoise. The Breastplate of the Hebrew High Priest Aaron contained twelve stones set in four rows. Reproduction of the Breastplate seen in Raiders of The Lost Ark is as close to accurate as we'll see in the present day. Black and White stones, such as onyx, worn at the shoulders are considered powerful balance factors for the high priest, high priestess, and as amulets worn by the mummy. In other situations, by implication, black and white stones, if worn together, sometimes call to mind mourning and might be bad luck. White is often linked with the doorway or entrance to any place under the discerning eye of a dowser. Perhaps this refers to the idea of incarnation itself. The ancients believed the doorway into the physical frame of reference is 'death' because the cord, once cut, destines the individual to the grave. To compensate, crystal wind chimes are suggested at the front gate or main door. They stir up akasha and minimize any association with the 'first cut.' This colour chart helps with the selection of the best [luckiest] colour for the front door to your home. Choose the one you like most. Also, ask me about THE COLOUR TEST if you are interested in colour and energy management.
So this could be more Biblical or mystic references on the part of the writers.

Does anyone think there is a significance between Hurley and Walt playing backgammon (i'm guessing that's what they are playing) and the fact that those stones were black and white - maybe Hurley is a bad guy???? any thoughts on that one?

i dont think that hurley is the bad guy, but i think that the fact they were playing backgammon (b&white pieces) symbolizes good v. evil... and walt got what he wants... does that mean people can controll the magic of the island??
I don't know but did anyone else notice Sayid was sitting against a black rock in this ep? Haha.
