Who's achievement is bigger?
Michael Phelps winning 8 gold medals in Beijing?
or
Sir Steven Redgrave winning 5 golds in 5 different games?
I'm going with Sir Steve. To do what he did in an endurance event, is just incredible, and to be at the top of your sport for over 16 years takes some doing.
Not taking anything away from Phelps though, he is amazing.

Phelps. Because the other guy is probably French/British.

I'm not sure. Redgrave was the best in one thing for a long time, but Phelps had to master several different types of swimming for his feats.

I'll be diplomatic and say that they're both equally amazing for two totally different reasons. It's hard to compare feats for two different sports which require two different disciplines for success.

Keep in mind that Phelps also won 6 golds in Athens. That's 14 golds over two games, downright unhuman.
Then again. So is winning your event 5 games running.
Apples and oranges, really.
Um...is Sir Steven any relation to the legendary acting family?

I went with Phelps. He's about to become incredibly wealthy, and that's the real scorecard.

I dunno about that Stevens guy, but I think that people might need to tone down the Phelps hype. Peeps are talking about the best athlete ever. Maybe the best swimmer ever. It's not a coincidence that the other record holder was also a swimmer. They have a ton of events they can win for a medal. They also have one for every style & every 50 meters (something like that). So there's way more opportunity for medals. Plus (unlike some sports) they can keep swimming into their 40s (beyond?). Where as gymnasts are pretty much done by 18 (flexibility issues).
