I think I need to point out right now that a discussion of where to do #2 turned in to pages and pages of grocery store critiques (on their food, not their restrooms)

Not to change the topic, but it looks like I'm hosting Thanksgiving. Nobody panic, my hubby is a good cook, and I can manage a few casseroles.

The biggest issue I'm having is timing. What can I make in advance? How do I keep everything hot?

I have an oven, a convection oven below that is sketchy in terms of working, a microwave, and a crockpot.

1. The weekend before, thaw the turkey. If there are any soups or gravy, go ahead and make these and freeze them.

2. Tuesday - make any casseroles that use squash or sweet potato and refrigerate until Thursday.. these keep very well.

3. Wednesday - Go ahead and prep the stuffing and refrigerate in the casserole dish you will serve it in. Any green beans, carrots, broccoli... blanch and then shock with cold water. This will shorten the cook time on Thursday. If you going to brine the turkey, do it now. Get the bird ready to go. If you have to peel potatoes, go ahead and do that and then store them in water in the fridge. This will also help remove extra starch.

4. Thanksgiving day, get up and cook the bird. Allow 45 minutes to an hour of resting time for the bird after it is cooked. During the resting time, cook the casseroles, stuffing in the now empty oven(s) and use the stove top to finish the other veggies you have prepped before hand. Everything should finish at about the same time that the bird resting period is over.
